So, I was busy this spring and didn't sign up for Celebrate Lit reviews for the next three weeks. I'm excited to share some fun things with you instead.
This week, I'm sharing my favorite homemade ice cream recipe with you.
Some of you may know that I grew up on a farm in the mountains of Virginia. In the summers, my father--who didn't cook much--would make homemade ice cream in one of those electric machines that chugged and whirred with rock salt around the sides. The family favorite back then was made-from-scratch banana.
Flash forward to raising my own kids--and I found one of those machines. That sound, along with the smell of fresh-mown grass, crickets chirping, alligators croaking, and the splash of a child in a swimming pool all spell summer to me.
I can't wait!
Peach Ice Cream
4 eggs
1 1/2 cups sugar
1/2 teaspoon salt
5 cups heavy cream (no one said this was healthy)
4 cups mashed peaches
3 tablespoons plus 1 teaspoon lemon juice
1 teaspoon almond extract
Beat eggs. Add sugar and salt gradually, beating until very thick (all of this is done in a regular bowl). Stir in remaining ingredients.
Freeze in an ice cream freezer. Be sure to have plenty of ice and rock salt (purchased in a regular grocery story and not expensive) on hand if you have the old-fashioned type of ice cream machine.

My parents churned homemade ice cream every summer from my mom's special vanilla custard recipe. To me, summer is swimming in the lake, corn on the cob fresh from the garden, laying out on the lawn at night to watch the shooting stars, and the scent of warm sun on the pine trees, as well as homemade ice cream. Your peach ice cream recipe sounds delicious!
