I find recipes all over the place. This recipe comes from a brochure I picked up two years ago when my husband and I rented a car and drove from Boston (after flying there from SC) to Maine. I asked to stop at the Welcome Center because they advertised free blueberry samples! The cool thing about these is that they use frozen wild blueberries you can find in many grocery stores--and frozen berries last forever (okay, not forever, but for a much longer time than fresh). Plus, they have such a wonderful taste!
Wild Blueberry & Brie Pastry Bites
Ingredients:
1 package mini phyllo shells
8 ounces brie
For the sauce:
1 1/2 cups frozen Wild Blueberries (others won't do)
2 tablespoons maple syrup
1/8 teaspoon nutmeg
1/8 teaspoon cinnamon
1/4 teaspoon vanilla extract
Instructions:
Make sauce by simmering frozen Wild blueberries with maple syrup, vanilla, nutmeg and cinnamon until it thickens, about 15 minutes.
Defrost phyllo shells while sauce is thickening.
Place one teaspoon sauce in bottom of each phyllo cup.
Trim skin off brie cheese and place one wedge of cheese (divide cheese first to match the number of shells) on top of sauce.
Bake for 12-15 minutes until pastry is golden brown.
Remove from oven and sprinkle each cup with thawed Wild blueberries. Serve warm. Makes 1 dozen.
