I'm holding on the last vestiges of summer for dear life! To me, dinner cooked on the grill is a little slice of the beach and heaven. This recipe comes from the Lynchburg, Virginia Junior League cookbook that I'm working my way through--so this gem has just been sitting there waiting for me to discover deliciousness!

Marinade for Beef
(This can actually be used for kebabs, steaks, or roasts).
Ingredients:
1 cup vegetable oil
2 medium onions, grated or minced
2 cloves garlic, crushed or minced (I added minced because who has time to grate or crush?)
1 tablespoon salt
1 teaspoon black pepper
1 teaspoon paprika
1 cup Burgundy (or other red wine)
Directions:
Mix all ingredients and let stand in covered jar overnight. Use to marinate beef for several hours. Grill!
Super easy, except it takes a little time to create those kebabs.
Ingredients for kebabs:
Beef stew meat or steak, cut in chunks
Vegetables: Zucchini, Onion, whole Mushroom caps, Squash, Cherry tomatoes,
and Bell Peppers
I also brushed the vegetables with the marinade--hint, reserve some for basting.
