Wednesday Recipes: Gloria's Potato Rosettes

No, I don't have any idea who Gloria is/was. She does, however, make some excellent potatoes. These are super easy to make and both my men said, "Excellent," upon the first bite. Enjoy!
Gloria's Potato Rosettes

Ingredients
2 cups mashed potatoes (homemade or instant)
2 egg yolks, lightly beaten
4 tablespoons melted butter or margarine, cooled
1/2 teaspoon salt
1/4 teaspoon nutmeg (or garlic powder)
1 tablespoon chopped chives (or parsley; I used parsley because that's one of the fresh herbs I grow)
Paprika
Directions:
In a large bowl, combine potatoes, egg yolks, butter, salt, and nutmeg. Mix until blended. Stir in parsley or chives.
Drop spoonfuls (roughly a rounded tablespoon) of mixture on to a greased baking pan, swirling the tops. Sprinkle with paprika.
Broil for 5 to 7 minutes until lightly browned and cooked through. Transfer to a serving dish.
Garnish with parsley and fresh basil leaves. Serve.
Good served with: Roast beef, Brussels sprouts, and fruit cake for dessert (according to the recipe card). I served with barbecued chicken legs and roasted vegetables.
Each one is only 36 calories!
