Wednesday Recipes: Seafood in Basil Sauce

I've been offering a lot of sweets so far this year--so, now it's time for a few meal ideas. With beef costing so much, believe it or not--shrimp is a great deal! Enjoy.


Seafood in Basil Sauce

Ingredients:


1 1/2 pounds scallops, shrimp, or crab

2 tablespoon dry basil leaves

3 cloves garlic

14 cup olive oil

1/4 teaspoon salt

1 tablespoon melted butter

2 tablespoon sherry

2 tablespoons grated Parmesan cheese

2 tablespoons chopped parsley


Directions:


  1. If seafood is frozen (and it is cheaper that way), run under cool tap water to thaw. Drain. Pat dry on paper towel.

  2. In blender, combine basil, garlic, olive oil, salt, and 1 tablespoon melted butter. Process until smooth, only about 30 seconds needed.

  3. Heat the 2 tablespoons butter in heavy frying pan over high heat until batter bubbles.

  4. Add seafood. Turn quickly in the butter to coat all over. Reduce heat to medium. Saute, stirring, until seafood is heated through and cooked.

  5. Add sherry. Simmer 30 seconds. Add sauce from blender. Stir with spatula until sauc coats seafood evenly.

  6. Sprinkle with Parmesan cheese and parsley. Serve immediately.

  7. Good served with: Hot, cooked pasta or noodles, sauteed whole mushrooms, and tossed green salad. (I served with hot arborio rice).
