Wednesday Recipes: Shrimp Curry with Golden Raisin Relish

Dear Readers, Yes, this is different and definitely not southern fare. But, hey, sometimes, a girl has to try something new and different.

California Shrimp Curry


Ingredients:

3 tablespoon minced green onion or chives

1/2 cup finely diced celery

2 teaspoon curry powder or to taste

2 cups cleaned, shelled, cooked shrimp

3 tablespoon all-purpose flour

2 ups milk

1 tablespoon lemon juice

1/2 teaspoon seasoned salt


Directions:


  1. In a medium saucepan, saute green onion, celery, curry powder, and shrimp in butter for 2 to 3 minutes.

  2. Stir in flour. Off heat, add milk. Cook, stirring over low heat until thickened.

  3. Remove from heat. Stir in lemon juice and seasoned salt.

  4. Serve with Raisin Relish and cooked rice. Also good served with slivered almonds, coconut, or other condiments.


Raisin Relish


Ingredients:


1 1/2 cups dark or golden raisins (I used golden)

2 tablespoons apple cider vinegar

1/4 cup brown sugar, packed

1 tablespoon instant minced onion

1 can (8 ounces) crushed pineapple

Dash salt


Directions:


  1. In small saucepan, combine all ingredients.

  2. Bring to a boil, stirring frequently.

  3. Simmer for 10 minutes

  4. Store in covered jar in refrigerator.

  5. Makes 2 cups. Also good served with other meats--baked ham, pork loin, or chicken breast, for example.


Enjoy with egg rolls or other Asian accompaniments (or samosas if they're handy). :)
