Dear Readers, to go along with my theme-a-month, and March's blustery winds, the next few weeks will be all about comfort food! Well, maybe not your typical comfort food, unless you're from the south...but here we go!
Buttermilk pie is super fast and easy--and showy. Be careful to put aluminum foil loosely on top towards the end or your pie might be a little too brown (not saying this one was on the edge or not). Have a warm, safe March--keep coming back for yummy recipes! God bless, Christina
Buttermilk pie

Ingredients:
2 cups buttermilk
3 eggs
¼ cup butter or margarine, melted
1-2 teaspoons lemon flavor
1 cup sugar
3 tablespoons flour
1 unbaked 9” deep dish pie crust
Directions:
Separate eggs.
Mix flour and sugar. Add egg yolks to flour mixture. Combine with buttermilk. Melted butter, and lemon flavor. Beat egg whites until stiff; fold in. pour in pastry shell.
Bake at 450 degrees for 15 minutes, then at 350 degrees for 25-30 minutes.
I received this recipe from a friend I've lost touch with over the years...funny how I think of her every time I make this pie.
