Dear Readers, I first made this in 2001 and wrote, "Do again!" I hate to confess, but I don't think I made it again until just now...ah, well, so many recipes to try and so little time! I hope you enjoy. :)

Basil-Cheese Pasta

Ingredients:

1 (12-ounce) package rotini (I didn't have any so substituted fettucine)

2 cloves garlic, minced

2 tablespoons olive oil

1 (3-ounce) package cream cheese, softened

1/2 cup cottage cheese

1/3 cup grated Parmesan cheese

1/2 cup dry white wine

1/2 cup chopped fresh basil

Directions:

  1. Cook pasta according to package directions; drain and keep warm.

  2. Cook garlic in oil in a skillet over medium-high heat, stirring constantly, 1 minute. Add cheeses; reduce heat and cook, stirring constantly until blended.

  3. Stir in wine and basil; cook, stirring often, 3 minutes or until slightly thickened. Spoon over rotini.

  4. Yield: 4 servings.

--I cut chicken breasts in half.

--Marinated in jarred Genovese basil pesto.

--My hubby grilled them--his contribution!

Roasted Vegetables:

I tossed broccoli florets, carrot sticks, and onion chunks in olive oil and fresh rosemary. Baked at 400 degrees, stirring randomly, for about 20 minutes.

Frozen garlic knots baked according to the package.

Delicious meal that has that different pesto touch!
