Wednesday Recipes: Lasagna in a Bun

Dear Readers
Good morning! I hope every one reading this blog is well and happy. I hope the fall weather is crisp where you are and that the sun is shining. God bless each and every one!
A little about this recipe...I first made it in the early 1990s. I don't know where it came from, but it's a favorite for my family. This time, the students of Psychology Club and I made it for the local women's homeless shelter. When I delivered the food, the ladies were excited to try something unusual--and I hope they enjoyed it! Blessings to you. :)
Lasagna in a Bun

Ingredients:
8 hoagie buns
¾ pound ground beef
1 8-ounce can tomato sauce
½ of a 1 1/3 ounce envelope dry onion soup mix (1/4 cup)
¼ teaspoon dried oregano, crushed
¼ teaspoon dried oregano, crushed
¼ teaspoon dried basil, crushed
1 beaten egg
¾ up ricotta or cream-style cottage cheese, drained
1 cup shredded mozzarella cheese (4 ounces)
Directions
1. Cut thin slice off tops of buns. Hollow out centers leaving ½ inch thick shells, set aside. Reserve breadcrumbs for another use.
2. In a skillet, cook beef till brown; drain off fat. Add tomato sauce, soup mix, and herbs. Cook, covered, over low heat for 5 minutes. Uncover; cook 5 minutes more or till of desired consistency, stirring frequently.
3. Meanwhile, in a bowl, combine egg, ricotta or cottage cheese and ½ cup of the mozzarella cheese. Spoon half the meat mixture into bottom of rolls. Top with cheese mixture, then remaining meat mixture. Top with remaining mozzarella cheese. Replace bun tops.
4. Wrap sandwiches individually in foil. Bake in a 400 degrees oven 20 to 25 minutes or till hot.
Makes 8 servings.

Thank you so much. God bless you.
Great idea! Having granddaughters and their fiancés for a visit - will make it for them, or rather they will make it. I don't cook when family visit!
This sounds a lot easier than traditional lasagna! Our family loves lasagna, but it's so hard to make that I don't make it very often. I'll have to try this.
