Wednesday Recipes--Best-Ever Cinnamon Rolls with Cream Cheese Icing

Dear Readers, I have made these for special brunches, Church fellowship, and my daughter's college graduation where we rented a house and all traveled for the weekend. This is one of the easiest yeast roll recipes ever and so good!


Hope you enjoy these on a lazy Sunday while sipping hot tea (before going to church:)!


Sour Cream Cinnamon Rolls


Ingredients:

1/2 cup butter

1 cup sour cream

1/2 cup sugar

2 packages active dry yeast

1/2 cup warm water (105 - 115 degrees)

4 cups flour

2 eggs, beaten

1 teaspoon salt


Directions:


  1. Melt butter in saucepan and bring to a boil. Remove from heat. Stir in sour cream and sugar. Cool.

  2. Dissolve yeast in warm water.

  3. Combine flour, eggs, yeast, sour cream mixture, and salt in blender. Dough will be soft.

  4. Refrigerate overnight.

  5. Next day, divide dough into halves. (The original says to punch before cutting in half but I find there's no need--just cut).

  6. Flour a cutting board or dry surface lightly. Flour your rolling pin lightly as well (add flour to either as needed so dough doesn't stick). Roll out each portion into a 12x15 rectangle (more or less--roll until the dough is stretched but not tearing or pulling).

  7. Spread with filling (see below) I adapted the filling over time from several recipes and found I like the paste version best. You can just mix the cinnamon and sugar together, spread the dough with butter, and then sprinkle the sugar mixture, but I don't think it sticks as well.

  8. Roll up jelly-roll style and cut into 1-inch slices.

  9. Allow to rise until double (about an hour). So, yes, you can bake these fresh in the morning.

  10. Bake in preheated 375 degree oven for 10 - 12 minutes.

  11. Allow to cool somewhat before icing.

  12. This makes two pans of cinnamon rolls--great for a party!

    Cinnamon Roll Filling


    Ingredients:

    (The below is per half the dough).


    1/2 cup soft butter

    2 tablespoons cinnamon

    1/2 cup brown sugar

    1/2 cup granulated sugar


    Directions:


    1. Mix the ingredients together.

    2. Spread over the rectangle of rolled dough. Start by dropping blobs and then spreading out; keep going until it reaches the edges.

    3. Roll up dough as for cinnamon rolls.


    Cream Cheese Icing:


    Ingredients:


    8 ounces of cream cheese, softened

    6 tablespoons butter, at room temperature

    1 1/2 cups powdered sugar

    1 teaspoon vanilla extract

    Pinch salt


    Directions:


    1. In a bowl, mix all ingredients 2-3 minutes, until fluffy.

    2. Spread on slightly cooled cinnamon rolls.


    This is double what is normally called for, but then again, you have a double batch of rolls!

You are welcome! By the way, the rolls come from my favorite Lynchburg Junior League Cookbook, the filling I adapted from several sources, and the cream cheese icing is also an adaptation. Years of trial and error. :)
