Wednesday Recipes: Cheddar Potato Casserole

Looking for a new side dish that's easy and yummy and different. Here you go...you're welcome. :)
Cheddar Potato Casserole
Ingredients:

3 cups mashed potatoes, seasoned (aka leftovers)
4 eggs, separated
1 cup shredded sharp Cheddar cheese
1 tablespoon finely chopped green onion
1/2 small green pepper, finely diced (I have a son who hates peppers so I added more green onion)
1/2 teaspoon celery salt (or celery seeds if you don't have celery salt)
Salt to taste (or not)
Paprika
Parsley sprig, for garnish
Directions:
Place potatoes in a bowl. Bring to room temperature.
Beat egg yolks into potatoes until well mixed. Stir in cheese, onion, green pepper, and celery salt. Salt to taste.
In a small, dry bowl, whip egg whites until soft peaks form. Fold into potato mixture.
Spoon into a well buttered 1 1/2 quart casserole. Sprinkle with paprika. Bake at 375 degrees for 25 to 30 minutes.
Garnish with parsley sprig. Serve immediately.
Good with meatballs, meatloaf, or pot roast.
Tip: You may use fresh, instant, or leftover mashed potatoes.
Serves: 4. Prep time about 20 minutes. Baking time 30 minutes.
