Another dish I always bring to Church Fellowship is some type of quiche. I keep store-bought crust on hand, just in case I start to worry that I don't have enough food to feed everyone. And quiche always goes--what's not to love about meat and cheese in a pie?
I hope everyone is doing well--it's good and truly summer here and I love the sound of peepers at night and cardinals in the morning.
Blessings,
Christina

Quiche and Tell Lorraine
Ingredients:
6 slices bacon, cooked but not crisp, chopped
1 1/2 cups shredded swiss cheese
3 eggs
1 1/4 cup light cream or Half and Half
1/2 teaspoon salt
Dash of ground nutmeg
1 unbaked 9-inch pie shell
Directions:
Arrange bacon on bottom of pie shell.
Top bacon with cheese.
Beat eggs lightly in mixing bowl. Add cream, salt, and nutmeg to eggs.
Pour egg mixture over cheese and bacon.
Bake at 375 degrees for 30 minutes.
See how easy? Some hints--place pie pan on a baking sheet in case there's any spillage. The quiche is done when the center doesn't move when shaken. You can make this several days ahead of time and reheat at 325 (or around there) for twenty-thirty minutes.
Note: This is a recipe I copied from an unknown (at this point in my life) source back when I was in high school. I've made and served to my family and various churches for years. :)
