Wednesday Recipes: Mandarin Orange Salad

Dear Readers, this is a recipe I love and my husband doesn't. So, I can only make it for company or in some circumstance where he won't be home for dinner. Do you have dishes like that--things you love but a spouse or offspring doesn't? Please share below!
Mandarin Orange Salad
Ingredients:

Dressing
1/4 cup vegetable oil
2 tablespoons granulated sugar
2 tablespoons cider vinegar
1 tablespoon minced parsley
1/2 teaspoon salt
1/2 teaspoon pepper
dash of soy sauce
Salad
(Note: The picture shows spinach--either way, it's yummy).
1/4 cup slivered almonds
1 tablespoon granulated sugar
1/4 medium head iceberg lettuce, torn into bite-size pieces
1/4 medium bunch romaine lettuce, torn into bite-size pieces
2 medium stalks celery, chopped
2 green onions, chopped
1 11-ounce can mandarin oranges, drained
Directions:
Combine dressing ingredients; set aside.
In heavy skillet, lightly brown almonds in sugar over medium heat. Cool and break apart.
Toss almonds with remaining ingredients.
Shake dressing and add to salad immediately before serving.
Great, light summer fare! I serve with grilled chicken or shrimp.
