Wednesday Recipes: Mrs. Kinzie's Brownies

Dear Readers,
Food doesn't just satisfy our taste buds and stave off hunger. Recipes can be reminders of people and times from our past.

Mrs. Dorothy Kinzie was my home economics teacher in high school. She was also the advisor for Future Homemakers of America. I served as Parliamentarian and Vice-President at James River High School and also as Secretary for the district. Because of Mrs. Kinzie, I got to experience my first "nice" restaurant and learned how to cook fancy recipes my farming family didn't do. We kept in touch for years, until she passed away, we never skipped Christmas cards.

Mrs. Kinzie's Disappearing Marshmallow Brownies
Ingredients:
1/4 cup butter
1/2 cup butterscotch bits
3/4 cup flour
1/3 cup firmly packed brown sugar
1 teaspoon baking powder
1/4 teaspoon salt
1/2 teaspoon vanilla
1 egg
1 cup miniature marshmallows
1 cup chocolate chips
1/4 cup chopped walnuts
Directions:
Grease 9-inch square pan.
Melt butterscotch bits and butter in heavy 3-1uart saucepan over medium heat, stirring constantly. Remove from heat and cool to lukewarm.
Add flour, brown sugar, baking powder, salt, egg, and vanilla. Mix well.
Fold marshmallows, chocolate chips, and nuts into batter until just mixed, approximately five strokes.
Spread in pan. Bake at 350 degrees for 20 - 25 minutes. Do not overbake; center will be jiggly when time is done but will firm as it cools.
Cut into bars after cooled.
Yield: 12 - 18.
Note: This recipe came from Mrs. Kinzie. She gave it to me in class on a piece of paper with blue ink--from a mimeograph machine. Remember that smell?
PS. Sorry for this being a day late...my mother moved into my home last Friday night and went into the hospital Monday morning with heart failure (not planned on either count). She's recovering, but I spent a lot of time in the hospital this week and no time on here.
