Wednesday Recipes--My Favorite Brownies

This is one of my go-to recipes. It's also super easy so I've had students make them when we gather together to cook for the homeless. You can add various sweet sauces and, of course, there's always a la mode. We first made these in 2011 but the rest of the date has faded from use!



Now that I think about it--these are my favorite traditional brownies. In the future, I'm sure I'll share my favorite creme de menthe, peanut butter, and other brownies. Have I admitted we have a sweet tooth in this family?

Double Chocolate Fudge Squares


Ingredients:


3/4 cup all-purpose flour

1/4 teaspoon baking soda

1/3 cup butter or margarine

3/4 cup granulated sugar

2 tablespoons water

1 package (12 ounces) semisweet chocolate pieces

1 teaspoon vanilla

2 eggs

1/2 cup chopped walnuts


Directions:


  1. In small bowl, mix flour and baking soda. Set aside.

  2. In medium saucepan, combine butter, sugar, and water. Bring just to a boil Remove from heat.

  3. Add 1 cup chocolate pieces and the vanilla. Stir until chocolate is melted and mixture is smooth (original recipe says to transfer to a medium bowl--I don't recommend; instead, stay with the pot and save a dirty dish and preserve more chocolate!).

  4. Add eggs, one at a time, beating thoroughly after each addition (with a wooden spoon if you just happened to use a non-stick pot).

  5. Gradually add flour mixture, beating until smooth.

  6. Stir in remaining chocolate pieces and the nuts (or not, if someone has an allergy).

  7. Spread in greased 9-inch square baking pan.

  8. Bake at 325 degrees for 30 to 35 minutes or until pick inserted near center comes out clean.

  9. Cool and cut into 16 squares.

PS. I'll share the caramel recipe once I get it right--as you can tell, it's a little pale in the picture--aargh. Frustrating, but still delicious!
