Wednesday Recipes: On the Sweet Side--Mini Blinis

Here's a recipe that's super easy so you could make it with young children. In fact, I recommend it because this takes awhile doing it all by yourself.


Also, I'd have to say it was the favorite treat today when I served at church fellowship--small and yummy! Please share below if you have a recipe that's great to make with kids. Finally, the recipe makes a ton so you can freeze some for later!

Mini Blinis



Ingredients:


Sixteen ounces of cream cheese, softened

1 teaspoon vanilla

1 egg yolk

2 loaves thin-sliced white bread (I lucked out and got BOGO Sara Lee)

2 sticks butter (1/2 pound) or margarine

1 cup sugar

2 tablespoons cinnamon



Directions:


  1. Combine cream cheese, vanilla, and egg yolk (can just stir with a spoon).

  2. Trim crusts from bread; flatten bread slices with rolling pin.

  3. Spread cream cheese mixture on bread and roll up tightly.

  4. Melt butter.

  5. Combine cinnamon and sugar.

  6. Dip rolls in butter, then sugar mixture.

  7. Freeze on a baking tray until firm.

  8. Cut each roll into 3 pieces. (At this point, you can pop them in a gallon freezer bag and freeze until you're ready to bake).

  9. Bake in preheated 350 degrees oven for 10-15 minutes.


Share with friends and be careful--they're addictive!
