Wednesday Recipes--Our Favorite Breakfast--Crepes!

When my children were in elementary school, my husband spoke at a conference in Quebec, Canada. I brushed up on my french, and took myself and the children sight-seeing. That included going to a nearby cafe and we had crepes with Nutella and love!
Low-Calorie Crepes

Ingredients:
1 cup all-purpose flour
1 1/2 cups skim milk
1 egg
1/4 teaspoon salt
Butter
Directions:
In a bowl, combine all ingredients with a whisk. Beat thoroughly with only a few bumps, crushing flour against the side of the bowl as needed.
Heat a lightly greased small skillet (6-inch) sprayed with nonstick vegetable spray coating.
Dab a small amount of butter and allow to melt in the skillet.
Using a 1/4 cup measure, pour around 2 tablespoons of batter into the skillet. Swirl batter until bottom of skillet is coated.
When bubbles appear in crepe, use a rubber spatula to flip (original recipe said to cook only on one side; I respectfully disagree). When bubbles appear on second side, flip onto a plate.
Continue until batter is done.
Serve with: vanilla yogurt, bananas, strawberries, Nutella, blueberries, lemon or lime curd, honey. Top with sprinkle of confectioner's sugar. My favorite combinations are yogurt with strawberries topped with honey, and nutella with bananas topped with confectioner's sugar. Have a food adventure and find your own favorite!
