Wednesday Recipes--Parma Pasta with Proscuitto

I'm going to include a picture of the cookbook from whence this recipe comes--because it's fallen apart! Talk about tried and true.

I'm not sure where I got this particular cookbook. I've loved bookstores forever and one that was near and dear to my heart just closed last year--DreamALot books. Now, we don't have a bookstore in my town. I am glad to go over one town over and enjoy Main Street Reads. Readers, are you blessed to have a thriving bookstore near you?

So, this recipe--it's fast, easy, and just a little different. Plus, it's a relatively inexpensive meal for a family--just throw in a loaf of French bread and some kind of veggie or salad! Blessings to all.

Parma Noodles

Ingredients:

2/3 cup butter (or 1/2 if you you want to be a little healthier)

1/4 pound prosciutto, cut into very thin strips (found in the deli section of your local supermarket in this very size packages)

1 cup light cream (half and half milk and cream)

1 cup marinara sauce (pick your favorite jar sauce, one with meat if you prefer more umami)

8 ounces wide egg noodles

1 cup grated Parmesan cheese

Directions:

  1. Melt butter in 2-quart saucepan; add prosciutto and cook 1 minute.

  2. Stir in cream and sauce. Simmer gently 10 minutes

  3. Meanwhile, cook noodles according to package directions.

  4. Combine noodles, sauce, and parmesan cheese; toss well. Feel free to add some shaved parmesan on top. :)

  5. Serves 4 -6.

This takes less than half an hour and costs under $20!!!

Ah, I'm married to an Italian (half Italian, half German heritage), so I must love noodles. It was in the fine print of the marriage contract. :)
