Wednesday Recipes: Pasta with Spicy Vodka Sauce

Dear Readers,
I hope you are well. I almost didn't post this recipe because it didn't photograph well, but it's too yummy to bypass! My son literally daydreams of it!
Further, it's funny, but if definitely shows how I find recipes anywhere. This one came off the back of a box and I've kept the box for years! Now, to get this on paper. And yes, that's real vodka in the recipe--and the mascarpone cheese on top is luxury!

Pasta with Spicy Vodka Sauce

Ingredients:
1 (1-lb. gnocchi in the original recipe) pasta
1 jar (25-ounces approximately) pasta sauce
1 tablespoon virgin olive oil
1/2 large yellow onion, finely diced
1/2 cup vodka
3/4 cup heavy cream
5 ounce mascarpone cheese
Directions:
Cook pasta according to package directions.
Heat oil in an ovenproof skillet (if you have one, if not transfer pasta in a casserole dish before broiling) over medium heat.
Saute onions until soft and translucent, about 6-8 minutes. Add the vodka to the pan and cook until liquid is reduced, 2 to 3 minutes.
Stir in the jarred sauce. Simmer for 15 minutes.
Stir in the cream and cook, about two minutes.
Remove sauce from heat.
Place cooked pasta in skillet or casserole dish. Toss with sauce to combine.
Top with dollops of mascarpone.
Place under the broiler until cheese melts, about two minutes.
Serves four.
