Wednesday Recipes: Pork Tenderloin Javanese (Kebabs)

Dear Readers, I hope you are doing well. Life is busy right now, but I am so thankful for a swimming pool. I need that moment when all I can do is float and look at the sky. I can't accomplish anything, can't check anything off my checklist, and I can just be.


This meal makes me think of summer--hope you are getting to relax!


Pork Loin Kebabs

Ingredients:


2 lbs. pork tenderloin


Marinade:

3 tablespoons minced walnuts

1 cup minced white onion

2 loves garlic, minced or pressed

2 tablespoons coriander

2 tablespoons brown sugar, packed

4 tablespoons each lemon juice and soy sauce

1/4 teaspoon crushed red pepper

4 tablespoons olive oil


Sliced candied kumquats, or tangerines, for garnish, optional


(I added vegetables--cherry or grape tomatoes, onion in chunks, pineapple chunks, bell peppers in chunks, whole, small mushrooms)


Directions:


  1. Cut pork tenderloin into 1-inch chunks.

  2. In a large bowl, mix nuts, onion, garlic, coriander, sugar, lemon juice, soy sauce, oil, and red pepper until well blended. Add pork cubes and stir to coat all cubes evenly. Cover and marinate 20 minutes.

  3. Thread pork on skewers, alternating with vegetables of choice.

  4. Grill about 10 minutes or until pork is cooked through, basting with marinade while barbecuing.

  5. To serve, slide pork and vegetables off skewers. Garnish if desired (I did not--the vegetables were my extra touch!).

  6. Serve with hot rice.
