Wednesday Recipes: Sara's Glazed Apple Cookies

Dear Readers, please forgive me. My stepmother was a part of my life for several decades, so just one post of remembrance doesn't seem enough. Plus, these are some of our favorite cookies. I hope you enjoy!


I hope each of you are doing well. I'm praying you stay healthy and warm!


Glazed Apple Cookies


Ingredients:

1 cup margarine or butter, softened

2 2/3 cup brown sugar

2 eggs

1 cup milk, or apple juice

4 cups all-purpose flour

1 teaspoon salt

2 teaspoons baking soda

1 teaspoon cinnamon

1 teaspoon ground cloves

1/2 teaspoon nutmeg

2 cups raisins

2 cups chopped raw apple (small pieces)

2 cups chopped walnuts (or 1 cup; hold back until you've made half the cookies for those people who can't have nuts)


Directions:


  1. Thoroughly cream margarine (or butter) and brown sugar.

  2. Add eggs and beat well.

  3. Sift together flour, salt, soda, cinnamon, cloves, and nutmeg; add to the creamed mixture alternately with liquid.

  4. Stir in nuts (or wait and add to only half the batter) and raisins, fold in apple.

  5. Drop from tablespoon on greased cookie sheets.

  6. Bake at 400 degrees for 10-12 minutes.

  7. Remove cookies from pan at once and cool on wire rack. Cookies are very tender while warm (I will admit I wait a bit before moving to the wire rack).


Glaze:


Ingredients:


2 tablespoons margarine or butter, softened

3 cups confectionary sugar

5 tablespoons apple juice or milk (I have even used apple cider)

1/4 teaspoon salt

1/2 teaspoon vanilla


Directions:


  1. Cream margarine and sugar, add salt.

  2. Stir in liquid and vanilla.

  3. Glaze while cookies are warm.


Yield: 48 5-inch cookies.

These apple cookies sound so good ! Would it work to bake them on sheets of parchment paper on top of the cookie sheets ? If so, that would make it easier to take them off right away.

I used parchment paper for mine (see picture in my comment), and it worked perfectly.

My daughters and I thought that your stepmom's cookies looked and sounded so good that we made them! We didn't have enough frosting to cover all 92 (and that was without walnuts, so I'm not sure how you make only 48!), but that was OK because they're also delicious plain! Next time we will halve the recipe and probably add more cinnamon. But this recipe is definitely a keeper! THANK YOU FOR SHARING IT!

By the way, these get better over time; the flavors blend together so well! We have almost finished them; but a week later, they are still just as fresh as when I baked them. I am looking forward to our second batch!
