Wednesday Recipes...Saucepan Fudgies

Talk about an easy cookie recipe! Oh, you weren't thinking about cookies at the moment? Strange. I thought cookies were on everybody's mind all the time, or at least chocolate.

Saucepan Fudgies

Ingredients:
4 squares (4 ounces) unsweetened chocolate
1/4 cup butter (4 tablespoons)
2 cups sugar
2 eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
1/4 cup chopped pecans or walnuts
Powdered sugar or granulated sugar, for rolling
Directions:
In large, heavy saucepan, melt chocolate and butter over low heat, stirring constantly. Remove from heat. Cool slightly.
Beat in sugar (I whisked with plastic whisk so no damage to my pan). Add eggs, one at a time, beating thoroughly after each addition. Stir in vanilla.
Mix flour, baking powder, and salt. Stir into mixture. Fold in nuts. Chill for about 30 minutes.
Shape dough into 1-inch balls. Roll in powdered sugar or granulated sugar (or half in each so people have a choice). Arrange on ungreased baking sheets about 2 inches apart.
Bake at 300 degrees for 18 minutes. Let cool. Remove from cookie sheets to wire racks to cool thoroughly. Store airtight.
Makes approximately 4 dozen. This was one of our choices for Easter dessert.
