Wednesday Recipes--Special Ham Rolls

One of the ways I try to serve others is by cooking for Fellowship hour at church once a month (if possible). Last weekend, I tried this recipe I've been meaning to try for years but just never had the right ingredients hanging around. Plus, the original recipe called for homemade biscuits and I wasn't prepared to make a double or triple recipe of those.


So, I got creative. At Walmart, I found a special on frozen dinner rolls. They made a fantastic substitute for the biscuits! When a high schooler takes the time to tell you she's a fan, you know they're good. :)

Special Ham Rolls


Ingredients:


1 stick butter

1 small onion, diced

3 tablespoons poppy seeds (I cut this back to 2 and seemed like plenty)

3 teaspoons prepared mustard

1 cup chopped deli ham (we use Virginia baked)

1 cup chopped country ham (the original recipe didn't say anything about cooking this but I did--in a skillet with a small amount of bacon grease leftover from other dishes)

3 ounces Swiss cheese, grated

1 tablespoon Worcestershire sauce

Homemade biscuits or dinner rolls


Directions:


  1. Melt butter; add onion and saute until tender.

  2. Add poppy seeds and mustard.

  3. In food processor or blender, combine deli ham, country ham and cheese; blend well.

  4. Combine ham and cheese mixture with butter mixture.

  5. Add Worcestershire sauce and mix until well blended.

  6. Put a generous spoonful of ham mixture into each biscuit or roll (I used a tablespoon at first and then went back and added extra at the end).

  7. Heat and serve warm (you can prepare these ahead to time as I did, then warm the morning of a special breakfast).

  8. The original recipe didn't specify the number of biscuits/rolls. I made 16 and had extra filling. You can choose to have more filling, less rolls--or the other way around.
