Wednesday Recipes: Cheddar Potato Casserole
Looking for a new side dish that's easy and yummy and different. Here you go...you're welcome. :) Cheddar Potato Casserole Ingredients: 3 cups mashed potatoes, seasoned (aka leftovers) 4 eggs, separated 1 cup shredded sharp Cheddar cheese 1 tablespoon finely chopped green onion 1/2 small green pepper, finely diced (I have a son who hates peppers so I added more green onion) 1/2 teaspoon celery salt (or celery seeds if you don't have celery salt) Salt to taste (or not) Paprika
