Wednesday Recipes--An Original: Mock Mu Shu Pork

Dear Readers, I may be from the South but I don't just cook Southern food. Sometimes, I come up with fast and easy recipes to feed my family. Here's one that saves you time and money vs. ordering Chinese.

Mock Mu Shu Pork
Ingredients:
Pa

ckaged Hormel (or other brand) seasoned (preferably teriyaki or other Asian influence) pork tenderloin
Fresh Stir-fry vegetables (Publix has these in one package--broccoli, mushrooms, snow peas, bean sprouts--if your grocery store doesn't have pre-packaged, create your own mix)
Hoisin sauce
2 tablespoons soy sauce
1 teaspoon dried ginger (or minced fresh)
1 tablespoon sesame oil
10 flour Tortillas (or 8, depending on package)
Directions:
Cook pork loin according to directions.
Add 1 tablespoon sesame oil to skillet (more, if needed) and heat until transparent. Add vegetables. Stir-fry vegetables until they are cooked but not soft, approximately 5 minutes.
Add soy sauce and ginger to vegetables (more or less depending on taste). You can also add other flavorings and 2 teaspoons cornstarch if you prefer a thicker sauce).
Heat tortillas in oven wrapped in aluminum foil.
Take out individual tortillas, brush with hoisin sauce.
Scoop out vegetables and place on tortilla.
Slice pork loin and add to vegetables.
Roll up as if you're creating enchiladas; enjoy!
Serve with other Asian accoutrements such as egg rolls, wontons, or potstickers. A very easy dinner for a busy evening!
